¿Por qué no es correcto si es una frase negativa?

En realidad, "anything" significa "cualquier cosa". "Nada" es "nothing".

Pero en inglés, al contrario de español, no se pueden usar dos negaciones en la misma frase. Entonces si vas a poner el verbo en negativo, la otra palabra no puede ser negativa también. No puedes decir "I don't want nothing" -aunque por ahí se oye de vez en cuando pero eso es otra historia- entonces debes usar la palabra afirmativa: "anything".

Si se pone el "just" en la frase, se le da el significado de que no quieres 'cualquier cosa', sino algo especial.

"I don't want anything" = No quiero nada
"I don't want just anything" = No quiero (simplemente) cualquier cosa
